Monday Meals: Creamy Pea Pasta

We all get the Monday blues. A new week has started and there is so much to do, then we come home to a hungry family who are looking forward to a yummy meal after an equally long and exhausting day.

That’s why we at Comfort have designed Monday meals just for you! Our intention is to provide you with that little bit of extra time to play with the kids, put your feet up and simply relax, or read that book that has been catching cobwebs on your side table.

This meal has been created using farfalle pasta, which kids will happily notice, look like bow ties. However you can use any pasta you wish, from penne to spaghetti!

Creamy Pea Pasta Recipe

Preparation time: 10 minutes

Coarse salt

Ground pepper

350 g farfalle pasta

280 g frozen green peas

¾ cup double thick cream

⅓ cup (preferably reduced-sodium) chicken broth

½ cup grated Parmesan cheese

2 Tbsp. pine nuts

1 bunch (140 g) rocket, chopped


Step 1

Add a pinch of salt to a large pot of boiling water. Throw in the pasta and cook until al dente— read the instructions on the back of the pasta packaging for times. Add the frozen peas one minute before the pasta has finished cooking. Drain the freshly cooked pasta with the peas and place them back into the pot.

Step 2

In a large pan, mix the double thick cream and chicken together. Allow to simmer until slightly thickened — this should take around seven minutes. Stir in the Parmesan until it has melted.

Step 3

Pour the creamy sauce onto the pasta and peas then toss to mix. Season with salt to taste. If your kids are fussy eaters, you may want to divide the pasta in half and leave the remaining pasta for the adults.

Step 4

Toast the pine nuts in a pan over medium heat, shaking often for one to two minutes or until golden. Add the pine nuts to the pasta along with rocket and season with pepper. Toss to combine, and serve immediately.
